Clean eating recipes: Smoked chicken, chia and broccolini
A true and original superfood, studies show that broccolini can help beat all life-threatening diseases – and it tastes great teamed with smoked chicken.
2 bunches broccolini, trimmed and cut into long florets
2 x 200g smoked chicken breast fillets, skinned and thinly sliced
1 firm ripe avocado, peeled and sliced into thin wedges
100g baby spinach leaves
1 tbsp black chia seeds
For the Dressing
2 tsp sesame oil
1½ tbsp mirin
1 tbsp olive oil
1 tbsp tamari
1 tbsp rice wine vinegar
1 long red chilli, seeded and finely chopped
1 Whisk all the dressing ingredients in a small bowl.
2 Blanch the broccolini, refresh under cold water; drain.
3 Put the broccolini, chicken, avocado and spinach in a large bowl and gently toss to combine.
4 Divide among four bowls, drizzle with a little dressing and sprinkle with the chia seeds.
