Immune-boosting sweet potato wedges

Chips so healthy, they don't have to be saved for a treat meal

ResizedComforting and moreish, these tempting sweet potato wedges are a fantastic healthy alternative to standard potato wedges. They’re rich in powerful immune-boosting phytochemical beta-carotene – and are an excellent source of healthy, low-GI carbohydrates.

Ingredients

For the wedges

2 sweet potatoes cut into wedges

4 tbsp olive oil

1 tbsp thyme leaves

salt and freshly ground black pepper

 

For the dip

2 ripe avocados

½ tbsp of red wine vinegar

2 tbsp lemon

2 tablespoons of extra virgin olive oil

2 tablespoons of water

Salt and pepper to taste

 

Method

1. Preheat the oven to 200C/400F/Gas 6. Toss the wedges with the oil and thyme then season well with salt and

freshly ground black pepper.

2. Place on baking paper and roast in the oven for 25-30 minutes, until lightly browned and crispy.

3.  Meanwhile scoop the avocado flesh out of their skins and place alongside the other ingredients in a food processor and blend for a couple of minutes until smooth and creamy.
