Festive almond granola recipe
Few things beat a crunchy, nutritious bowl of granola in the morning, and this nutty, festive twist from wellness blogger Cat Meffan makes for a great start on cold mornings or a tasty snack later in the day.
The amounts aren’t really important when it comes to granola, but you want to have the oats as your base, and slightly less of everything else. Feel free too add a few spices (think cinnamon, nutmeg, ground cloves, ground ginger and orange zest) if you fancy it.
1 Pre-heat the oven to 170°C
2 Mix the dry ingredients in a large bowl.
3 Heat up the coconut oil, so it’s a liquid and mix with maple syrup or agave & almond butter
4 Add the liquid mixture to the dry ingredients and stir thoroughly until it’s all covered. Your mixture should still be dry-ish, just coated in the mixture, making some bits stick together
5 Put the mixture onto a baking tray – ideally piled no more than 1cm highBake for 15mins – it’s very important to check your granola every 5 minutes and give it a little flip around, to stop burning.
Pop a few clusters into a box along with some blueberries and raspberries and you’ve got a perfect little snack combo!
