Bored of plain-old porridge for breakfast? Try making this tasty vegan-friendly overnight oats recipe the night ahead, instead. The oats are a source of a soluble fibre called beta-glucan, which has been shown to have a cholesterol-lowering effect. Apple has a prebiotic effect, meaning it feeds the healthy bacteria in your gut. The walnuts, pumpkin seeds and sesame seeds are a source of heart-healthy fats and blueberries are a powerful source of antioxidants and vitamin C, meaning that they can help support your immune system. So, tuck in!

Serves 2

150ml Rude Health Almond Drink or Oat Drink
1 apple
90g rolled oats
60ml apple juice
1 tsp cinnamon
2 tbsp walnuts
1 tbsp pumpkin seeds
2 tbsp sesame seeds
150g blueberries

1 Grate the apple and mix with the Almond or Oat Drink, rolled oats, apple juice and cinnamon. Cover and place in the fridge overnight.

2 Chop the walnuts and mix with the pumpkin seeds. Serve the Bircher muesli with the sesame seeds and blueberries.
