It’s the Sunday morning dream: relaxing with the weekend papers and a stack of banana pancakes. Alex Dodman aka @TheFoodGrinder (search him on Instagram if you’re not already one of his almost 80k following) has come up with this ingenious recipe for making healthy pancakes from scratch.

We love this take on the classic American-style stack, made with creamy Meridian almond butter, as it’s loaded with different textures and flavours and is great for sharing with family, friends or your significant other. Overall, it’s a more-ish, low-carb breakfast that feels indulgent but is actually healthy.

Alex says: ‘Banana pancakes are the perfect post work out refuel, great if you’re on the go and can be prepared ahead for busy days. Banana provides the slow release carbohydrates to give you energy, while the eggs, almond butter and yoghurt provide you with the essential protein and healthy fats. With the added fruit packed full of vitamins, it’s the perfect start to the day and tastes great. Mix it up with different fruits and all varieties of Meridian nut butter to find your favourite combo.’

Healthy breakfast choices: Alex’s delicious healthy banana pancake recipe

Serves 4
2 large bananas
3 eggs
Meridian Smooth Almond Butter
1 tub Greek yoghurt
Strawberries, chopped
Blueberries
A little oil – we used coconut
Honey or maple syrup, to serve

Method
1
Mash the bananas, add the eggs and then whisk into a pancake consistency.
2 In a pan, heat a little oil and, using the entire mixture, cook three pancakes (add one more banana and an egg if you need more mixture, depending on thickness).
3 Place one pancake on a plate and spread with Meridian Almond butter.
4 Add the chopped strawberries.
5 Place another pancake on top, and spread with Greek yoghurt.
6 Sprinkle over a layer of blueberries.
