Better breakfast recipes: Healthy granola

We love a good bowl of granola, but most shop-bought varieties are crammed with refined sugars and ingredients with number on. DIY your favourite crunchy, satisfying breakfast with this healthy granola recipe instead.

Goji berries are little bursts of juicy, fruit flavour while pumpkin seeds half the recommended dose of magnesium, which helps your body to relax. Perfect for starting the day in a calm and balanced state.

Serves 6
2 tbsp coconut oil
90g rolled oats
170g buckwheat groats
60g walnuts, chopped
35g pumpkin seeds
55g goji berries
2 tbsp raw honey
2 tbsp coconut palm sugar

Method

1 Preheat oven to 180°C/160°C fan/gas mark 4. Melt the coconut oil in a saucepan; leave to cool.

2 When cool, mix all ingredients in a bowl using your hands. Spread mix thinly on a baking tray and bake for 10 minutes. Cool before serving and store in container in a cool, dry place.
