Runner bean coleslaw


  • 200g runner beans, finely shredded
  • ½ small red cabbage, finely shredded
  • 1 medium carrot, grated
  • 1 banana shallot, finely sliced
  • 4tbsp mayonnaise
  • 1 tsp Dijon mustard
  • Salt and pepper

This recipe is suitable for people who are aiming to cut down on fat, saturated fat and calories in their diet, or those who generally wish to eat more healthily.

Serves: 4 generously as a side

Preparation time: 5 minutes


In a medium to large sized bowl mix together the runner beans, cabbage, carrots, shallot, mayonnaise and Dijon mustard, and then season with salt and pepper.

Each serving contains: 152 calories, 7.2g sugar, 12.1g fat, 1.8 saturated fat & 0.4g salt
