Mini Strawberry Trifles

Ingredients

  • 300g strawberries, hulled and sliced or halved
  • Keep some strawberries aside to decorate
  • 5 tbsp granular Canderel
  • 250g low-fat ricotta cheese
  • 150g low-fat custard
  • 4-6 tbsp skimmed milk
  • 6 cantuccini/amaretti biscuits, broken into small pieces

These delicious fruity desserts can be made in minutes and are perfect for a summer BBQ

Preparation time: 10 minutes

Per Serving:
Fat: 5g (of which saturates 1.5g)
Cals: 210
Carbs: 29g (of which sugars 19g)

Method:

  1. Place the strawberries in a bowl. Sprinkle over 2 tbsps Canderel and 3 tbsps water. Leave for a couple of minutes until the juices start to ooze out of the strawberries.
  2. Drain any liquid from the ricotta then mix along with 3 tbsps Canderel in a food processor until smooth.
  3. Remove a third of the mixture and continue to mix the remainder together with the custard and milk until the mixture falls off the end of a spoon.
  4. Arrange the biscuit pieces at the bottom of 6 glasses.
  5. Drizzle over the strawberries along with the liquid.
  6. Spoon over some of the custard mixture.
  7. Finish with the reserved ricotta and a couple of slices of strawberries.
