Whether it's a lazy lunch or something on the go, this light meal will see you through the afternoon
Ingredients
Serves 4- 150g quinoa
- 125g fine green beans, halved
- 200g feta, crumbled
- 200g frozen soya bean (defrosted) or fresh aduki bean sprouts, rinsed
- 2tbsp each chopped fresh chives and coriander
- 25g fresh mint, finely chopped
- 10g sea salad
- 1tbsp soy sauce
- 3tbsp sweet chilli sauce
- Juice of 2 limes
- Put the quinoa in a pan and gently heat for a few minutes until the grains begin to pop. Remove from the heat and cover with lots of boiling water. Bring back to the boil and simmer for 10-15 minutes until tender. Drain and rinse in cold water. Put into a large bowl.
- Meanwhile, plunge the green beans into boiling water and cook for 5 minutes until just tender. Drain and refresh in cold water. Drain again and add to the quinoa.
- Add the feta, soya or aduki beans, chopped herbs and sea salad. Fold together with a spoon. In a small bowl mix together the soy sauce, chilli sauce and lime juice, fold into the salad and serve.
