Feta & quinoa herb salad

Whether it's a lazy lunch or something on the go, this light meal will see you through the afternoon

Ingredients

Serves 4
  • 150g quinoa
  • 125g fine green beans, halved
  • 200g feta, crumbled
  • 200g frozen soya bean (defrosted) or fresh aduki bean sprouts, rinsed
  • 2tbsp each chopped fresh chives and coriander
  • 25g fresh mint, finely chopped
  • 10g sea salad
  • 1tbsp soy sauce
  • 3tbsp sweet chilli sauce
  • Juice of 2 limes
  1. Put the quinoa in a pan and gently heat for a few minutes until the grains begin to pop. Remove from the heat and cover with lots of boiling water. Bring back to the boil and simmer for 10-15 minutes until tender. Drain and rinse in cold water. Put into a large bowl.
  2. Meanwhile, plunge the green beans into boiling water and cook for 5 minutes until just tender. Drain and refresh in cold water. Drain again and add to the quinoa.
  3. Add the feta, soya or aduki beans, chopped herbs and sea salad. Fold together with a spoon. In a small bowl mix together the soy sauce, chilli sauce and lime juice, fold into the salad and serve.
