Healthier cocktails: peach and chia Bellini recipe

80g ripe yellow peach, skin removed
15ml agave nectar
2 teaspoons white chia seeds
Thin wedges of ripe yellow peaches, to garnish
1 Place the peach into a mini food processor or blender along with the agave nectar and Aperol. Blend until smooth.
2 Transfer the purée to a small bowl and stir in the chia seeds. Leave the chia seeds to swell for about 5 minutes.
3 Divide the peach mixture between the glasses. Half-fill each glass with prosecco and mix well to distribute the peach purée with the prosecco.
4 Top with the remaining prosecco and garnish with a peach wedge.
